“I’ve spent my entire life in pursuit of flavor. I’ve traveled the world to explore the t hings that define good cooking,” says author Samin Norsat in Netflix’s documentary series Salt, Fat, Acid Heat.

Based her book of the same name, the four-part series features Norsat as she travels to the home kitchens of Italy, the southern islands of Japan, the heat of the Yucatán and back to Berkeley’s Chez Panisse—where she started her culinary career—to demystify and explore the central principles of what makes food delicious and how each of us can easily incorporate those elements into every dish.

Sat, Fat, Acid, Heat premieres October 11 on Netflix.
